Double Layered Raw Chocolate Fudge (nut-free)

I posted this photo on my personal facebook and Instagram last night and it caused quite the furor! I’d go so far as to say, it ‘went viral’. Ok not quite but I had everyone begging me for the recipe, so here it is 🙂 I take no responsibility for the over consumption of said fudge!

I can in no way, claim this recipe as my own,. I found this over at PaleOMG and let me tell you… it is dangerous to have this in large amounts in one’s fridge.D.A.N.G.E.R.O.U.S! I modified Juli’s recipe a little bit to suit our needs and this i what I came up with. I’m sorry for the lack of photos. There are only 2 pieces left…

  • 200g / 1 C Coconut Oil (melted or solid)
  • 240g / 1 C Tahini
  • 150g / 1/2 C Coconut nectar (or raw honey, or real maple syrup)
  • 30g / 1/3 C desiccated Coconut
  • 15g / 5 tsp Raw Cacao
  • 2 pinches of salt
  1. Add all ingredients to your Thermomix EXCEPT for the cacao and 1 pinch of salt and mix on speed 7 for 3 seconds.
  2. Pour half the mixture into a container which would make a nice shaped and depth fudge piece. I used a large square Tupperware container. Place this half of the mixture in the freezer
  3. Add the 2nd pinch of salt and cacao to the remaining mix and mix on speed 7 for 3 seconds, scrape down the sides and whizz it up one more time on speed 7.
  4. Once the first half of the mixture is solid, pour the chocolate fudge mixture over the top and refreeze
  5. Once it’s solid, I popped the whole brick of fudge onto a cutting board and warmed up a big knife under hot water and sliced up gorgeous gorgeous squares of fudgey deliciousness!! If you’ve used a metal baking tray, you could use a knife or even a pizza cutter to portion out your fudge. Or… you could find a quiet spot somewhere and tuck in with a spoon. Just sayin. There’s no judgement here…

Variations:

  1. Dark Chocolate chips
  2. Raw cacao nibs
  3. orange zest (Jaffa fudge, yes please!)
  4. Extra coconut sprinkled on top
  5. Few drops of organic peppermint oil added to one of the layers
  6. A sprinkle of organic ground coffee

    1 CUP coconut oil?! holy moly, I wouldn’t be able to leave the bathroom for a week…
    Any other suggestion for what to use? Butter maybe?
    Do I need to cook any of it, since I don’t have one of those thermomix thingies 🙂

    • Hee hee Mia, the bathroom might only be an issue if you ate the whole batch at once perhaps?! You could try cacao butter which has a high melting temperature meaning it wouldn’t melt as fast in summer lunchboxes… you could try butter, can’t vouch for it though. No cooking required, this one’s a raw fudge and sooooo good! Thanks for commenting 🙂 ❤ Jodi

    Hi Jodi! I am avoiding honey, do you think Stevia would work in this recipe? :

    • Hi Naomi, you could try it but it will definitely give it a different taste. Stevia quality greatly differs brand to brand too I’ve found – Sweetleaf is the one which I think is the best quality. They only use the young leaves and no stalks which is what leaves the bitter after taste. Let me know how you go? 🙂

    Juli has some fantastic recipes doesnt she! I am certainly going to be trying this one. I dont think the melting would be to much of a problem in the lunchbox. We have the “Energisers” on our blog and they do well in the lunchbox as long as it has a few ice packs in them. Of course I wouldnt be putting them in on days where it is extra hot.
