Choc Coco Nut Cookies

After spending the day cooking up some ghee and other healthy tucker with my bestie (the other hot pink chilli), I came home and continued to feel inspired. One of the blogs my friend recommended was Gluten Free Fix. You should all check it out! Her Gluten Free No Bake Cookies are what inspired this:

Choc Coco Nut Cookies

  • 100g / 1/2C coconut oil
  • 1 cup honey
  • 1/2 cup cocoa powder
  • 1/2 cup natural peanut butter
  • 3 cups coconut flakes
  • 1/2 teaspoon Himalayan salt
  • 1 teaspoon vanilla extract
  • 1/4 cup dried cherries
  1. Place oil, honey and cocoa powder in the Thermomix and melt (or use a saucepan over low heat).
  2. Add peanut butter, salt and vanilla.
  3. Stir in coconut flakes and cherries
  4. Scoop cookies onto a tray covered with baking paper.
  5. Put in the fridge to set.
  6. Store in an airtight container in the fridge up to 1 week and freezer up to 1 month.
They taste amazing cold and ideal for our hot, Queensland, summer weather. I put a container of these in my parents fridge to keep for Boxing Day but kept receiving texts from my folks saying how yummy they were and they want “just one more”. Next time, I will need to count them first 😉
